Smoked Red Peppers and Feta Dip

  • 1 small red onion, sliced
  • 1 tablespoon olive oil
  • 3 large red peppers (or 400g jar of smoked peppers)
  • 200 g soft feta cheese
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon fresh thyme, leafs

  • Place the whole peppers directly over a gas burner. When charred through, place in a plastic bag so that it would steam and the charred bits will wipe off.
  • Saute the onion in the olive oil until very soft and light golden in colour.
  • Rub the skins off the peppers, discard seeds and chop. Place in a blender and blend all the ingredients until smooth.
  • Serve with toasted crusty bread or toasted pita bread slices.

I live in a beautiful village on the island of Malta ( Europe) with my wonderful daughter, partner and two cats. I love the vineyards infront of my house or walking down to the valley of olive trees. ( I do pick olives every year) Some years ago I stopped working as a chef but still do a lot of home cooking. What I miss are the expensive ingredients I worked with, its rather hard cooking on a tight budget.
