Slow Cooker Bahia Black Bean Soup

"Adapted from a Honduran recipe. The ancho pepper makes it milder than if I added a jalopeno."

  • Soak beans overnight. Rinse and place in crock pot with water.
  • Soak ancho pepper in a small bowl with 1/3 cup warm water for five minutes. Dice ancho. For extra warmth in the soup, leave in the seeds. Otherwise, remove the seeds. Blend ancho and water together. Add mixture to beans.
  • Add onion, pepper, garlic oregano, tomatoes and lime juice.
  • Cook on high for six hours. Add water if necessary while it's cooking. When beans are softened, either mash or put through a blender.
  • Garnish with fresh or dried cilantro, grated queso or sour cream.
