  • 9 cups water
  • 2 small pig's feet, split
  • 2 12 lbs tripe, cut into bite sized pieces
  • 1 large onion, chopped
  • 4 garlic cloves, sliced
  • 6 slices pepperoni, about 1/4 inch each, cubed
  • 14 12 ounces hominy, drained
  • 13 cup chili powder
  • 1 tablespoon seasoning, for menudo (found in ethic section of grocery store)

  • Bring to a boil the water, pig's feet, onion and garlic and then turn down heat to low and simmer, covered, for about 1 1/2 hours.
  • Add tripe, pepperoni, chili powder, menudo seasoning and hominy. Bring back to a boil and then simmer, covered, for about 1 1/4 hours or longer until tripe is to your preferred tenderness. Add salt and pepper to taste.
  • Enjoy piping hot with raw onion, chopped cilantro and a splash of lime juice for garnish.
