Shrimp Marinara over Pasta

  • In a 10 inch skillet, heat oil over medium heat. Add garlic and saute for about one minute.
  • Add herbs and seasonings, allowing dried herbs to "bloom" in the oil for a few seconds. Add the tomatoes and their juices.
  • Stir and taste for seasoning. Bring tomatoes to a simmer, cover, and simmer over medium-low heat while pasta cooks, about 10 minutes or so.
  • Meanwhile, cook pasta according to package directions.
  • About five minutes before you are ready to serve, stir the shrimp into the tomato sauce and cook until shrimp are pink and firm, about 5 minutes.
  • Divide drained pasta into two pasta bowls and spoon sauce over pasta. Serve at once.
