- 1 medium onion, halved
- 3 stalks celery
- 4 tablespoons olive oil
- 2 garlic cloves, minced
- 1 large green pepper, quartered
- 1 (28 ounce) can whole tomatoes, chopped
- 1 (16 ounce) can tomato sauce
- 1 teaspoon sugar
- 1 bay leaf
- 1 teaspoon thyme
- 1⁄2 teaspoon salt
- 1 tablespoon parsley
- 1 teaspoon hot pepper sauce
- 2 lbs medium shrimp
- hot cooked rice
directions
- Slice onion, celery and green pepper. Keep each separate. Heat oil in 5 quart pan over medium heat. Add garlic and saute for 1 minute. Add onion and saute for 2 minutes. Add celery and green pepper and saute for 3 minutes longer. Add tomatoes, tomato sauce, salt, bay leaf, sugar, thyme, parsley and hot pepper sauce. Reduce heat and simmer for 15 minutes. Add shrimp and cook for 4-5 minutes longer, stirring gently. Serve over hot cooked rice.
