- 1 teaspoon orange zest
- 2 tablespoons orange juice
- 2 tablespoons olive oil
- 1 tablespoon cider vinegar
- 1⁄4 teaspoon sea salt
- 2 cups coarsely shredded carrots
- 2 beets, peeled and coarsely shredded
- 1⁄2 cup of fresh mint, chopped
- 2 tablespoons toasted sesame seeds
directions
- In small bowl, whisk together orange zest, orange juice, oil, vinegar and salt.
- In large bowl, combine carrots, beets and mint. Add dressing and toss to coat. Serve topped with sesame seeds.
