Shamelessly Simple Baked Butternut Squash

"I came up with this on a week night when I just wasn't up to making anything fancy. Luckily, it worked out wonderfully. Most supermarkets sell butternut squash pre-cubed which makes this even easier."

  • 1 butternut squash, cut into 1 inch cubes
  • 14 cup olive oil

directions

  • Preheat oven to 400°F.
  • Arrange squash cubes in a single layer in a casserole.
  • Drizzle evenly with olive oil.
  • Bake for 45 minutes to 1 hour when edges of squash are nicely browned.

  1. Keeper! Thanks for posting MCK. I cut back on the oil and put quite a bit of course sea salt on. Yummy! Mine was done in 30 minutes.
     
  2. I was looking for a simple recipe for baked butternut squash and this fit the bill. I did cut back on the oil but the flavor was still very good. Next time I might try sprinkling some cinnamon or nutmeg on before serving. I used the leftovers to make Recipe #242484.

  4. I don't usually buy butternut squash because they are a so hard to peel and cut up. However, I found some beautiful ones from Colorado at our local market and bought one. On Thanksgiving Day, I was looking for a less caloric way to fix it and found this recipe! So simple.....I use this method for sweet potatoes but never thought of it for butternut squash. It was absolutely delicious! I used a sprinkle of Kosher salt before it went into the oven. MadCatKim, thanks for the fantastic recipe!
