  • Preheat oven to 325 degrees F.
  • Grease and flour 1 8x4 inch loaf pan.
  • In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Next, stir in zucchini and vanilla.
  • Combine flour, cinnamon, soda, baking powder, salt and; stir into the egg mixture. By hand, mix in nuts and grated chocolate if desired.
  • Pour batter into prepared pan.
  • Bake for 60 to 70 minutes, or until done.

Right now, I'm a student, majoring in Illustration. After I graduate, plan on going to the city for makeup and styling. I live in the gym, snowboard and just started competing in bikini / fitness model shows. I just started really cooking and baking a lot 4 years ago after my parents got divorced. Now, I just love to cook, bake, and share with others. I have become known for my pumpkin and banana breads and also my chocolate chunk nut cookies. They are constantly requested by my boyfriend and his co workers!
