- 2 eggs
- 2 egg whites
- 2 1⁄4 cups sugar
- 2 teaspoons vanilla extract
- 1⁄2 cup canola oil
- 3 cups all-purpose flour
- 1⁄2 cup baking cocoa
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 3⁄4 teaspoon salt
- 1 cup 2% buttermilk
- 3 cups coarsely shredded and unpeeled zucchini
- 1⁄2 cup butter
- 3 cups confectioners' sugar
- 1⁄4 cup baking cocoa
- 1 1⁄2 teaspoons vanilla extract
- 1⁄4 cup skim milk
directions
- In a large bowl, beat eggs until frothy.
- Add sugar gradually, beating until mixture is thick and well mixed.
- Beat in vanilla and oil.
- Combine flour, cocoa, baking powder, baking soda and salt.
- Alternatively add flour mixture and buttermilk to egg/sugar mixture, ending with buttermilk.
- Beat until smooth.
- Fold in zucchini.
- Pour batter into 9 x 13 backing pan that has been sprayed with non-stick cooking spray.
- Bake at 350 for 40 to 45 minutes until toothpick comes out clean.
- Let cool.
- To make frosting, beat together remaining five (5) ingredients until frosting is very creamy.
