- 4 eggs
- 1⁄4 cup onion, chopped
- 1⁄4 cup mushroom, chopped
- 1⁄8 cup bell pepper, chopped
- 1⁄8 cup tomatoes, chopped
- 2 tablespoons milk
- 1 tablespoon water
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄8 teaspoon garlic powder
- 1 teaspoon fresh parsley
- 1 1⁄2 teaspoons margarine or 1 1/2 teaspoons butter
directions
- saute mushrooms, onions, and peppers in margarine until almost done, add tomatoes and cook for 1 minute.
- Mix remaining ingredients together and pour in pan with sauteed veggies.
- Cook on medium heat until no longer runny.
- Serve with toast and fruit for a delicious start to your day.
