ingredients
- 3⁄4 cup onion, chopped
- 1⁄3 cup butter
- 3⁄4 teaspoon dill seed
- 1 teaspoon dill weed
- 1 teaspoon oregano
- 1⁄4 cup honey
- 1⁄4 cup flour
- 1 (28 ounce) can diced tomatoes
- 3 cups chicken stock
- 1 1⁄2 teaspoons salt
- 1⁄2 teaspoon white pepper
- 1⁄4 cup fresh parsley, chopped
- 2 cups half-and-half cream
directions
- Sauté onion, dills, oregano in butter.
- Add flour, cook roux.
- Add tomatoes and (juice to equal stock amount) and stock.
- Salt & pepper.
- Bring to low boil.
- Reduce & simmer.
- Cook long enough to get rid of flour taste.
- Before serving, warm up the half & half and slowly add to hot mixture along with parsley and honey, low simmer (so it does not break to boil) and serve.

This was so good and so easy! It kept well in the crock pot on low. One thing is I whizzed it before adding the cream and I will do it that way next time. Mmmm, a big steamy mug and a grilled cheese sandwich! This is going to bump a soup off of my top ten soup list. Thanks Barb-j! Made for PAC 2011 ;)Reply
