Sausage, Spinach and Cheese Breakfast Squares

- 14 eggs, beaten
- 1 (16 ounce) bag , chopped frozen spinach, defrosted
- 1 lb sausage meat or 1 lb ham, cubed
- 2 1⁄2 cups shredded cheese, of choice
- 1 teaspoon salt
- 1 teaspoon ground pepper
- 1 cup onion, chopped
- 1⁄2 cup baking mix or 1/2 cup flour
directions
- Spread the sausage out on a microwave-safe bowl and microwave until it's cooked. Drain it and crumble it and set aside.
- Beat the eggs with the baking mix (we use Carbquick) and salt and pepper.
- Drain the spinach and add to the eggs.
- Add the cheese.
- Add the sausage.
- Bake in large rectangular pan that's been well sprayed with non-stick spray (I use a 13x8" pan) You could also bake these (for less time) in sprayed muffin tins.
- Bake 350 degrees for about 40 minutes or until the center is set. Cool and cut into squares.
