Salsa Eggs

"Just a little something I came up with while bored of plain scrambled eggs. Serves 2 or 3, but if you're really hungry it can serve one or can be doubled to serve more!"

  • Scramble together all ingredients in a medium sized bowl. Pour into a saucepan and cook over low-med heat until done.

  1. Easy and quick-a very nice way to liven up scrambled eggs and add some nice texture. I used marble jack cheese instead of parmesan, for personal preference, but I'm sure it'd be great either way. It was very filling too. Thanks!
     
  2. It was okay. The eggs to salsa ratio was a bit high on the salsa side, but it was an interesting way to switch up boring scrambled eggs.
