  • Preheat oven to 350F and lightly grease a 9x13 baking pan.
  • In a large bowl beat butter and sugar until fluffy and light in colour.
  • Add syrup, eggs and rum, beating at low speed until blended. Then add flour and beat again on low speed. When flour is blended in stir in raisins and coconut.
  • Spread mix in pan and bake 30-35 min's or until toothpick test comes out clean. Cool brownies to room temperature then frost.
  • Frosting: in a 2 Litre saucepan, melt butter over medium heat. Stir in cocoa and bring to a boil, stirring constantly!
  • Remove from heat and cool slightly. Add rest of ingredients; stir until smooth; spread on brownies.

Why "SoupCookie"? My cousin Ryan use to come to my house after school sometimes and was *always* hungry! So he used to make his version of chocolate chip cookies and I can't remember what he did or didn't do right but the cookies never failed to come out flat and doughy and gooey. We'd put them in a bowl with milk and eat it with a spoon.....sooooo good!
