- 1 -2 tablespoon olive oil
- 2 garlic cloves, crushed
- 1 onion, chopped
- 1 -2 carrot, chopped
- 1 stalk celery
- 1 green pepper
- 2⁄3 cup fresh parsley
- 2 -3 teaspoons basil
- 2 teaspoons oregano
- 2 -3 large tomatoes, coarsely chopped
- salt and pepper
- 2 cups canned red kidney beans
- 5 cups cooked brown rice, cooked with
- 1 teaspoon salt
- 1⁄2 cup parmesan cheese, grated
directions
- Heat oil and saute garlic, onion, carrots, celery, green pepper, parsley, and dried herbs until onion is translucent.
- Add tomatoes, salt, and pepper, and beans.
- Combine rice and parmesan cheese.
- Add bean mixture to rice mixture.
- Garnish with more fresh parsley and grated cheese.

I love cooking, and recently changed my diet to include more vegetarian entrees. I am challenged by simultaneous recipe preparation, and sometimes don't prepare ingredients enough ahead of time.
