  • 2 cups potatoes, peelings from about 4 baked potatoes, with a little potato flesh left on
  • 2 tablespoons butter, melted

directions

  • Heat oven to 450°. Place peels on a lightly oiled baking sheet; brush the peels with the butter.
  • Bake until peels are golden and very crisp, about 20 minutes. Drain on paper towels.

  1. We enjoyed these as part of a very tasty brunch, with sautéed mushrooms. And they were so easy to make and SO delicious! All they require is a bit of forward planning. I baked the potatoes yesterday while some other dishes were in the oven. Today I sprinkled the potato peelings with a blend of Greek herbs and 4 cloves of minced garlic, then I dribbled the melted butter over them. I used slightly less butter (one slightly heaped tablespoon) and it was enough. I made the specified amount for four, and two of us demolished these in no time. If there'd been more, I have no doubts that we would have made short work of them too. So I do suggest that when you make these, that you make more than you think you'll need!
