ingredients
- 1⁄4 cup olive oil
- 1 head broccoli, cut into florets
- 2 garlic cloves, chopped
- salt
- pepper
directions
- Preheat oven to 400 degrees.
- Toss broccoli and garlic in the oil until coated.
- Add salt and pepper to taste and spread in one layer on cookie sheet.
- Roast for 5 to 8 minutes, or until tender, stirring once or twice.

Very good - I had a red pepper I needed to use so I cut that up in big pieces and cooked it with the broccoli. I roasted the veggies for about 15 minutes. Came out perfect! I've never had broccoli roasted - we eat alot of broccoli and I usually just steam it - we'll be making this one often. Thanks for posting!

Wow! I used one of those bags of prechopped veggies (broccoli, cauliflower and carrots), chopped them into smaller pieces, tossed them with some olive oil, sea salt, pepper, and garlic powder, and popped them in the toaster oven. All it took was about 12 minutes on 450 degrees, and we had perfectly roasted veggies.
