- Thaw turkey.
- 24 hours in advance to cooking clean out &brine turkey. Fill large bucket or pan with enough water to cover turkey. Mix in 2 cups of salt and add turkey. Soak overnight (approx. 24 hrs).
- Rinse turkey throughly, inside and out.
- Preheat oven to 400.
- Place turkey in roasting pan with 3 cups of water.
- Mix in small cup; all seasonings, smash up rosemary as well as possible and sprinkle mixed seasons all over the turkey.
- Stuff turkey if you wish at this point --
- Cover and place in oven until throughly cooked (approx. 4 hours).
- Remove cover for last hour to brown and crisp.
- Baste turkey with pan juices every 30 - 45 minutes.
