  • Heat the oven to 375 degrees.
  • Prepare the lemon mayonaise in a small serving bowl by mixing together the mayonaise , lemon juice and rind , and the chopped dill. Cover and place in the fridge.
  • Wrap each asparagus spear in a slice of pancetta. Arrange on a baking sheet and drizzle the olive oil over them. Sprinkle a little black pepper on top and roast in the oven for 6 to 7 minutes ( I cook mine about 12 minutes ) until tender.
  • Serve warm with the bowl of lemon mayonaise.
