Rice and Veggie Pilaf

"I wanted a healthy alternative to boxed rice dishes, so with a little trial and error I came up with this recipe. It's my husband's favorite rice dish now. I like to sprinkle the rice with slivered almonds."

  • Heat oil in a pan over medium heat.
  • Add orzo and rice and cook until grains look clear.
  • Add chicken broth, salt, and pepper.
  • Bring to a boil.
  • Reduce heat, cover and simmer for 15 minutes.
  • Spray a separate pan with a little cooking spray.
  • Saute chopped vegetables for about 3 - 5 minutes.
  • After the rice has finished cooking, mix sauted vegetables with rice.
  • Cover and cook for 5 more minutes.

  1. Well, I thought this was a really good recipe; DH on the other hand disagrees. He does not like celery and I thought with it being cooked and not crunchy he would get past it, but did not. Not the fault of the recipe, I should have just cut it smaller! ;) Will make again, and just leave out the celery. Was very tastey!! Made for PAC Spring 2010.
