- Gradually beat in sugar, beating until egg whites form stiff peaks.
- Beat egg yolks until thick.
- Mix vanilla into egg yolks.
- Gently fold egg whites into yolks.
- Spoon currants into stemmed glasses, reserving a few for garnish.
- Spoon egg mixture over currants.
- Top with reserved currants.
