Quick Mexican 3 Ingredient Queso Dip

"This couldn't be easier. It looks like a thin casserole. My friend Jenn brought this to a dinner party and I thought that she'd spent way more time and money. I was shocked to find out how easy this is. I use the chili with beans. But, I'm sure that you could use whatever you like. This is so yummy on tortilla chips and is a great break from the average chips and queso. It also makes a great filling inside flour tortillas."

  • Spread a can of chili in a 9x12 dish
  • Top with 8oz of cream cheese
  • Sprinkle with monetary jack cheese (as much as you want).
  • Bake at 350 for 20-30 minutes- until top is bubbly. Enjoy!

  1. I made this for our weekly snack night. It was easy to make & used pantry staples. It would be a nice recipe to keep in one's files for drop ins. I used a canned chili (no beans!). I sliced the cream cheese horizontally in thin slices so I had enough to cover the whole pan. After topping with the cheese I microwaved it a few minutes. When it was all melted & bubbly I sprinkled the top with sliced black olives, green onions, and tomatoes. Served with thin tortilla chips it was very filling. Thank you for sharing your recipe!   2. My mom made this all the time when I still lived at home. Now its a favorite among my own friends that request I bring it all the time. We call it chili cheese dip. I always use the Hormel turkey chili and cheddar cheese.
     
  3. Excellent dip! I used chili w/out beans & a whole 8oz block of mjack. Next time I will use pepper jack. We all loved this! Made for PAC Fall '08.
