- 400 g chicken thighs, boneless, skinless
- 1⁄2 teaspoon dried oregano
- 1⁄2 teaspoon pepper
- 1⁄2 teaspoon salt
- 30 ml olive oil
- 15 ml lemon juice
- 1 lemon, zest
- 3 whole wheat tortillas (gluten-free optional)
- 100 g garbanzo beans (canned) or 100 g chickpeas (canned)
- 100 g bell peppers, roasted
- 6 g garlic, crushed
- 30 ml lemon juice
- 30 ml olive oil
- 1⁄2 teaspoon paprika
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
directions
- Cut chicken thigh fillets into cubes.
- In a bowl, combine olive oil, lemon juice, lemon zest, dried oregano, salt, and pepper. Add in chicken and toss thoroughly.
- Thread chicken into skewers and cook in a grill pan on high heat for 4 minutes per side.
- While chicken is cooking, prepare hummus. Add all ingredients to a food processor and pulse until smooth.
- Serve with warm wheat tortillas.
