Quick and Easy Jalapeño Poppers

"Easy and quick version of the appetizer we all know and love. Pro tip: use a serrated grapefruit spoon to scrape out the pepper's seeds and membranes. We use McCormick's Grill Mates Hickory BBQ rub in this recipe, but feel free to use your favorite smoky pork rub."

  • Preheat oven to 425 degrees Farenheight. Cover a baking sheet with aluminum foil.
  • Clean, halve and scrape the jalapenos, making 24 halves.
  • In a microwave safe bowl, nuke the cream cheese in 30 second intervals until soft. Blend in the shredded cheeses and bacon until combined.
  • Using a butter knife, fill each jalapeno with the cheese blend, scraping the knife across so that the tops are flat and level with the sides of the peppers. Sprinkle with the pork rub.

I am a married cruise-only travel agent with two stepsons, aged 20 and 25. It took a while to get the boys used to my cooking, as they were raised on fast food and pre-packaged foods (i.e. mac-n-cheese from the blue box, frozen dinners, Chef Boyardee, McDonalds, etc.). My mother is from Spain and I lived there as well as Germany, England and Italy growing up, which influenced both my career and my cuisine!</p> 8726943"
