Queso Cheese Sauce

"This queso isn't so much a dip as it is a sauce. I use this to top my burritos, empanadas "Recipe #251992" and enchiladas. I also pour this cheese sauce all over my rice and beans, too!! Enjoy!"

• Yields: 1 cup
• Serves: 4

ingredients

• 1 tablespoon unsalted butter
• 1 tablespoon flour
• 1 cup milk
• 1 cup monterey jack cheese, shredded
• 1⁄2 teaspoon cumin
• salt and pepper

directions

1. Melt butter in a small saucepan over medium heat.
2. Whisk in flour and cook for about 1 minute.
3. Whisk in milk gradually until incorporated.
4. Gradually stir in cheese until melted.
5. Season with cumin, salt and pepper to taste.
