  • Preheat oven to 350.
  • grease or spray 2 loaf pans and lightly flour.
  • Stir splenda and applesauce together in large bowl to blend.
  • Mix in eggs and pumpkin.
  • In med bowl combine flour, flax, wheat germ, cloves, cinnamon, nutmeg, baking soda, salt, and baking powder.
  • Stir into pumpkin mixture in 2 addtions, adding cranberries in with second addition of flour mix.
  • Divide batter evenly among pans.
  • Bake 1 hour 10 minutes or till done.
  • remove from pans and cool completely on rack.
