- 1 cup Splenda granular, sugar substitute
- 1 cup unsweetened applesauce
- 3 large eggs
- 1 (16 ounce) can solid pack pumpkin (libby's)
- 3 cups whole wheat flour
- 1⁄4 cup flax seed meal
- 1⁄4 cup wheat germ
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon baking powder
- 1 cup cranberries (fresh or frozen chopped)
directions
- Preheat oven to 350.
- grease or spray 2 loaf pans and lightly flour.
- Stir splenda and applesauce together in large bowl to blend.
- Mix in eggs and pumpkin.
- In med bowl combine flour, flax, wheat germ, cloves, cinnamon, nutmeg, baking soda, salt, and baking powder.
- Stir into pumpkin mixture in 2 addtions, adding cranberries in with second addition of flour mix.
- Divide batter evenly among pans.
- Bake 1 hour 10 minutes or till done.
- remove from pans and cool completely on rack.
