ingredients
- 1 (19 ounce) can kidney beans, drained and rinsed
- 1 (19 ounce) can romano beans, drained and rinsed
- 1 (19 ounce) can pinto beans, drained and rinsed
- 1⁄2 small red onion, chopped
- 1 red pepper, chopped
- 1⁄4 cup Italian dressing
- 1⁄2 teaspoon cumin
- 1⁄2 teaspoon ground coriander
directions
- Combine all ingredients and mix well.

Very good! I couldn't find romano beans, so I just used a bit more of the pinto and kidney beans. I used my favorite bottled dressing which has a lot of garlic in it, and the onion, coriander and cumin as called for. As I used freshly cooked beans, I found that I needed to add a little salt as well. If you are a bean salad fan, you'll love this recipe. I can't wait to take it as the carb portion of my lunch- after marinating overnight, I'm sure it will be even more outstanding. Thanks very much!
