  • 1. Make sure all nuts are toasted. Place in a food processor and process till course.
  • Mix together coconut, processed nuts, flax meal and oat flour. *You can make the oat flour by placing 1/2 cup oats in a food processor and process till fine.
  • Measure dates out before they are chopped. Cut dates and as you are cutting them, place them in the nut/oat mixture and mix around a bit so they don't all stick together.
  • In a separate bowl combine almond butter, and coconut oil. If need be, warm up just a bit till it all comes together smooth. Then add the vanilla extract, salt and honey.
  • Pour the wet ingredients over the dry ingredients and mix well.
  • Pat into a pie plate or 8x8 pan, making sure to really push down and compact it together.
  • Refrigerate for an hour or until hardened.
