Prosciutto-wrapped Asparagus

- 16 asparagus spears, trimmed,bottom half of stems peeled
- 8 slices prosciutto, large,cut in half crosswise
- 3 tablespoons olive oil
- salt & freshly ground black pepper
directions
- Bring a large pot of salted water to a boil, add the asparagus, and cook for 5 to 6 minutes.
- Drain, and when the asparagus is cool enough to handle, wrap each spear with a slice of prosciutto.
- Brush the spears with oil, and season with salt and pepper.
- Set the grill on medium heat, and cook the asparagus for 2 to 3 minutes per side, or until the prosciutto is marked.

My goodness, do NOT put your asparagus into a pot of boiling water! Just take a normal fry pan or saute pan and put just enough water in to barely cover the asparagus; then bring to gentle boil, and let it go for no more than 2 minutes. This is called blanching and your asparagus will be perfectly cooked. Drain and proceed but leave out the salt. Prosciutto is very salty on it's own.

this is such a great recipe.. I used all the ingredients but i didn't pre-boil the asparagus. I just wrapped the prosciutto around the asaparagus and sprinkled lightly with pepper and olive oil. then i preheated the oven to 450 and roasted for 5-7 minutes.... they came out perfect!!! all my guests were very impressed!!! they tasted amazing!!! thanks for sharing such a simple yet elegant recipe!

I have been making a variation of this recipe for years. I like to wrap individual spears for appies or a group of 3 as a side dish. I do blanch the asparagus and make a bunch (on tin foil lined baking sheets) ahead so I can just pop the tray in to broil just before serving. I like to spread Borsin (herb/garlic) on the prosciutto before wrapping - and definitely skip the salt! Very popular dish!!

I have made this for years, as it is one of my husband's favorite dishes. Unless the asparagus is very thick I usually don't bother blanching. I do however spread the procuitto with cream cheese (often mixed with minced garlic and a little pepper) or just mayo for extra flavor and to help it adhere better. An easy side dish suitable for a special meal.

Made some tremendous friends that I still think of often. I'll continue coming here because my recipes are here and so many more that I tried over the years as a member.
