ingredients
- 8 cups diced potatoes
- 1⁄3 cup chopped onion
- 3 (14 1/2 ounce) cans chicken broth
- 1 (10 3/4 ounce) can condensed cream of chicken soup
- 1⁄4 teaspoon pepper
- 1 cup cream cheese, cubed
- 1⁄2 lb bacon, slices cooked and crumbled
- chives, for garnish
directions
- In a crock pot, combine the first five ingredients.
- Cover and cook on low for 8 to ten hours or until potatoes are tender.
- Add cream cheese and stir until blended.
- Garnish with bacon and chives.

Very good chowder for such a simple recipe. I had every intention of making this in the crockpot, but ran short of time and wound up cooking it on the stovetop. I liked the tang the cream cheese added to the broth and the addition of the bacon and chive topping. I did add more pepper to give it a little more zip. Made for Spring 2011 Pick A Chef.
