Portuguese Stewed Chicken

"An easy one pot chicken recipe."

• Serves: 4-6

ingredients

• 6 lbs chicken, cut into pieces or 8 chicken pieces
• 1 onion, finely chopped
• 2 garlic cloves, finely minced
• 1 tablespoon paprika
• 1 teaspoon salt
• 1 tomatoes, peeled and finely diced
• 1⁄4 teaspoon black pepper
• 1⁄2 teaspoon ground cumin
• 1 teaspoon ketchup
• 1⁄4 cup olive oil
• 1⁄4 - 1⁄2 cup water, if needed
• 10 potatoes, peeled and quartered

directions

1. In a large pan, heat the olive oil. Saute the onions for several minutes, then add the garlic and saute a few minutes more.
2. Add the spices, tomato and chicken pieces, then cook slowly over medium heat.
3. When chicken is almost cooked, add the potatoes with a little water. Cook until the potatoes are tender and the chicken is fully cooked, adding water as required.
4. Taste and adjust the seasonings as desired.
