Penne Nicoise

"Posted for Zaar World Tour 2005. A vegetarian Salade Nicoise with pasta. In France, this salad is only served in spring and summer, so use the freshest vegetables you can find. Pasta cooks with potatoes and beans, which makes it easy and fast. From Vegetarian Times Cooks Mediterranean. Have not made this yet."

  • Bring large pot of salted water to boil and add green beans and potatoes. Return to boil and add pasta. Cook, stirring occasionally, until the pasta is al dente, about 11 minutes or according to package directions.
  • Meanwhile, in small skillet heat the olive oil over medium heat. Add onion and garlic and cook, stirring often, until onion is soft, about 5 minutes.
  • Remove from heat and stir in tomatoes and olives and set aside.
  • Drain the pasta, beans and potatoes, reserving 1/2 cup of pasta water. Transfer to serving bowl. Add the tomato mixture, vinegar, pepper and salt and toss to mix.
  • If pasta seems too dry add reserved pasta water as needed, a little at a time.

  1. This is a good quick salad. I used yellow fleshed new potatoes, a red onion and green olives (family preference). Tomatoes aren't in season yet and I bet this would be even yummier later on when the local tomatoes are available. Made for Jammin' Java Jivers ZWT5
     
  2. A quick pasta salad, based on traditional Salade Niçoise. This might be a good dish for unexpected company. Cooking the beans and potatoes together, with pasta, does speed up the preparation, but I think it loses some of the distinctness of a traditional nicoise. The pasta effectively stretches the other ingredients, but again perhaps at the loss of some taste.

  4. I acidently bought kalamata olives with the pits still in, when I made this but did have green olives so substituted those. It was DH's dinner and he liked it well enough,but he didn't rave... he said it was well worth 4 stars. Please see my rating system: 4 stars from DH :) Thanks !
     
  5. This is a very beautiful and colorful pasta dish. I did not know that Nicoise was a type of olive, and DH did not like them in this at all. I think I would like this much better without the olives, but then it wouldn't be Penne Nicoise, now, would it?

Zaar Chefs I have met so far: Elmotoo, justcallmeToni, ~Rita~, Midwest Maven, Bird&amp;Buddha (both of them) and most recently, Ms*Bindy from upstate New York:) Wonderful, sweet, friendly people and great chefs! Most relevant thing to mention here is that I am a vegetarian, and recently became a&nbsp;vegan&nbsp;(almost 100%). To put vegetables and other things not meat or fish on the table I work as an actuary (in my case anyway, a combination of statistician, number-cruncher and/or programmer). For fun I like to travel. Just came back from&nbsp;Namibia, a peaceful democracy in Africa with lots of animals! Got some terrific pictures of lions, leopards, cheetahs, elephants, rhinocerous, hyenas, all kinds of antelopes, giraffes and zebras. Namibia is the second most sparsely populated country per square mile, just behind Mongolia. Update:&nbsp; We went to Italy this Spring.&nbsp; We had lots of pizza and pasta.&nbsp; The pizza is so much better in Italy, particularly the crust.&nbsp; The Amalfi coast was absolutely beautiful.&nbsp; Spectacular natural scenery (Canada and Alaska are really beautiful, Patagonia in Chile is sublime, Iceland is unique) has been my latest passion as far as travel destinations but I have seen quite a few big cities too (Paris, Berlin, London and Madrid to name a few). On my bulletin board at work I keep a list of every country I've visited (other than the U.S. of course). So far I've made it to five continents: Europe, Africa, South America, Asia and North America of course. I've got only two other continents to conquer:) I don't usually have difficulty finding vegetarian dishes here in the U.S. or overseas, but finding vegan dishes is much harder. I have no kids, just cats, Kumquat, Cranberry, and more recently Quincy and Kiwi. They are purebreds, of the breed alley caticus (okay, American shorthair I guess). Our cats are not vegetarians, though my boyfriend (significant other, long-term partner, whatever) is. I am a friend of all animals both tamed and wild. In addition I am a freethinker and my boyfriend studies philosophy. Either way, we get along pretty well.&nbsp; Also, please allow me to say that my BF and I recently bought a condominium in NYC.:)&nbsp; Pet peeve?
