Pebble Cookies

"A chocolate cookie for those who like to sneak some nutrition in when the kids (or husbands!) aren't looking. Brownie-like taste and texture. My grandsons originally called these "mud pies"; the nuts and chips were the "pebbles", and the name evolved from there. This is a tweaked version of an old family recipe. We like it without fruit, but my neighbor swears it's much better with a handful of dried cherries added; she also likes to use part whole wheat flour."

  • With mixer, beat butter, honey and eggs till fluffy and light.
  • Gradually add dry ingredients; beat till well blended. Stir in chips and optional ingredients.
  • Drop by rounded teaspoon or small cookie scoop on greased or parchment lined cookie sheets.
  • Bake 12 minutes at 350, till bottoms start to brown; remove to rack to cool.

Retired now, with lots of time to bake and try new recipes! I've been known for homemade cookies for ages, but working - mostly - on quick breads these days. My favorite cookbook is the one my girls made for me; they put all my recipes in plastic page protectors and sorted them by category - this book is what we rescue first in an emergency!
