- 1⁄2 cup butter, softened
- 1⁄2 cup sugar
- 1⁄4 cup light brown sugar, packed
- 1 cup flour
- 1 cup quick-cooking rolled oats
- 1⁄4 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 cup peanut butter chips
- 1 1⁄2 cups cranberries
- 2⁄3 cup light corn syrup
- 1⁄2 cup water
- 1 teaspoon vanilla extract
directions
- heat oven to 350.
- Greese 8-inch baking pan.
- beat butter and sugars in a bowl until fluffy. Stir together flour, oats, baking powder and salt. gradually add to butter, will be the consistency of coarse crumbs when fully mixed. stir in chips.
- Reserve 1 1/2 cups crumbs for topping. Firmly press remaining mixture in the bottom of the pan.
- Bake 15 minutes or until set.
- In medium saucepan, combine cranberries, corn syrup and water. Until mixture boils. Reduce heat; simmer 15 minutes. Remove from heat. stir in vanilla. spread evenly over baked layer. sprinkle reserved crumbs on top. return to oven; bake for 15 to 20 minutes. cool completely. cut into 16 bars.
