Peanut Butter Triple Toffee Cookies

"This recipe is from the Bell Plantation website. Bell Plantation produces PB2, a powdered peanut butter that is much lower in fat than regular peanut butter and tastes like homemade when you add water to it. I found it in the health food section at my local grocery store."

  • Preheat oven to 375.
  • Lightly grease baking sheets.
  • Cream butter, shortening at medium speed until creamy.
  • Gradually add sugars, PB2, water, vanilla, salt, soda., then add dry ingredients.
  • Once well mixed, then stir in chocolate chips and toffee chips.
  • Drop by teaspoonfuls about a few inches apart on a greased cookie sheet. Bake for 8-11 minutes or until lightly browned. Let cool and then remove to wire racks.

I love to cook, but have gotten out of the habit of making elegant meals. 3 kids will do that to you-it seems all they want is hot dogs and boxed mac and cheese! I prefer vegetarian dishes, but since I live in a small community it's often difficult to find good substitutes or the right ingredients. I also end up making a separate meal for my family. Again, 3 kids who only want hot dogs. ;) My dream kitchen would be a fully stocked, commercial kitchen where I could experiment to my hearts content without interruption, and the grocery fairies would replenish my supplies at night while I'm sleeping.
