Parsleyed Rice With Peas

- In a saucepan, heat butter over medium heat. Add onions and cook until wilted. Add rice and stir. Add water, bay leaf, salt, pepper, and hot sauce. Bring to a boil, cover and reduce heat to simmer. Cook 20 minutes.
- Meanwhile, combine peas with the remaining tablespoon of butter, salt and pepper to taste. Heat while shaking and stirring the pan so the peas cook evenly for about 1 minute.
- Add peas and parsley to rice; stir and serve.

Lovely recipe and so easy to make. I didn't have enough white rice, so I added in some wild rice. Worked well. I did put in a little more than the 1-1/2 cups of water. Read the directions through before starting...the butter is divided. 2 tbsp for the rice and 1 for the peas. Thanks for sharing. Made for the March Herb/Spice of the Month in the Gardening Forum
