  • Preheat broiler. Grease a broiling pan. In a small bowl, mix together the parmesan cheese, butter, mayonnaise and lemon juice. Season with basil, pepper, onion powder and celery salt. Mix well and set aside.
  • Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for 2 more minutes. Remove the fillets from the oven and cover them with the parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and the fish flakes easily with a fork.

  1. We had this tonight and made as directed except we used a bit of old bay and white pepper. I didn't have onion powder so I left that out. I used San Joaquin Gold cheese which add a lot of flavor. We loved this and the kids ate without question. Thanks

  3. This was good thanks Deb. I had quite a few small fillets of a snapper-like fish we caught ourselves, so the tiny bit of mix I made for 2 servings had to spread a long way. It was more like a seasoned butter over the fish. I was concerned about over cooking the little things, so it isn't as brown as you might have expected. Nevermind, it didn't overpower the delicate fish and tasted good. I used onion salt and celery seed as that's what I had on hand.

I was a bit concerned at how it would look as the parmesan mixture melts as you coat the fish with it, but it looks as beautiful as it tastes. thanks for sharing this lovely recipe. I have added this one to my favorites.
     
  5. Delicious and quick way to make fish -- I cut this recipe down to serve 4 and skipped the celery salt and onion powder subbing in onion salt -- also used light mayo. Thanks for sharing!
