ingredients
- 2 lbs red potatoes
- 1⁄3 cup heavy cream
- 2 tablespoons butter
- 4 ounces cheddar cheese (or mexican cheese blend)
- salt
- 4 ounces green chilies, canned
directions
- Peel potatoes and dice into 1/2 inch pieces. Boil some water, add potatoes, and boil for about 15-20 minutes. (until potatoes are soft)
- Meanwhile heat heavy cream over low heat and add cheddar until combined and smooth.
- Drain potatoes and return to pot. Mash potatoes with potato masher.
- Add all ingredients to potatoes except chiles and salt. Mix until smooth.
- Add chiles to desired spiciness and salt to taste.
- You can also add finished potatoes to casserole dish and melt additional cheese over top.

I used russets because that’s what I have and left the skins on, we like the rustic texture. I’m sure I used more than 4 ounces of green chiles, they had a nice kick. Love Young Guns ready green chiles. I finished off in a casserole dish with extra cheese as mentioned in the directions. Great for make ahead. Easy and I’ll make again. I served them with the EASY, INEXPENSIVE LENTIL TACOS that are posted here. Great meal.
