- 8 medium flat mushrooms, stalks trimmed
- 40 g baby spinach leaves
- 100 g marinated feta, drained, crumbled
- 2 tablespoons fresh thyme leaves

- 1⁄4 cup honey
- 2 tablespoons balsamic vinegar
- 1⁄3 cup olive oil

- To make balsamic dressing, combine all ingredients in a screw-top.

Yum! We halved the recipe but probably used more spinach because most of the spinach that I put in with the mushrooms burnt or just went totally crispy so I added lots of fresh new leaves to the finished dish, stirred it around, and just let it wilt in the pan before serving. We didn't have marinated feta, just plain, so this may have been a contributing factor, I don't know. We'll make it again though; easy & tasty week-night fare. Thanks for posting, Wendy :)
