- 1 head napa cabbage, shredded
- 6 green onions, sliced
- 2 (3 ounce) packages Top Ramen oriental-flavor noodles
- 1⁄2 cup slivered almonds, lightly toasted
- 1 bunch fresh cilantro, chopped
- 6 chicken breast halves, cooked, cut into bite size pieces

Dressing (use 1 seasoning packet from one of the above ramen packages)
- 3⁄4 cup vegetable oil
- 1⁄2 teaspoon salt
- 6 tablespoons rice wine vinegar
- 1⁄2 teaspoon pepper
- 4 teaspoons sugar
directions
- Prepare dressing and set aside.
- Combine cabbage, green onions, ramen noodles, almonds, cilantro and chicken. Stir well.
- Add dressing and stir to coat.

I love Asian slaws and this is one of the best I've tried. The ration of chicken makes it a star ingredient instead of an after thought and I really liked using napa rather than green cabbage. The salad was colorful, tasty, and would be great for a summer meal or event. I made a half recipe & used only 1/3 cup of oil. There was plenty of dressing to coat everything without the salad being soggy. Thanks for sharing this keeper of a recipe! Made for Spring 2010 Pick A Chef.
