ingredients
- 3 jumbo brown eggs
- 1 tablespoon heavy cream
- 1 dash fine sea salt
- 1 dash white pepper
- 1 tablespoon unsalted butter
- 3 tablespoons maui onions (Chopped)
- 1⁄3 cup Baby Spinach (Cooked & Drained)
- 2 ounces pepperoni (Mini, Sliced)
- 2 ounces button mushrooms (Sliced)
- 2 tablespoons red bell peppers (Chopped)
- 2 tablespoons sliced black olives
- 1⁄4 cup shredded mozzarella cheese
- 4 cherry tomatoes (Cut in Half)
- 1 -2 dash cayenne pepper (* See Chef's Note)
directions
- In a small bowl whisk eggs, cream, fine sea salt and white pepper.
- In a 8-inch Omelet pan melt butter. As eggs start to set-up gently push to the center using a rubber spatula.
- Add Maui onions, spinach, mini-pepperoni, mushrooms, red bell pepper, black olives, cherry tomatoes and *cayenne pepper. Let the omelet cook for 2-3 minutes or until omelet set-up and add cheese. If needed place omelet pan under the broiler to finish.
- Place the omelet on a warm serving plate.
- Garnish the plate with Fresh Seasonal Fruit.
- *Chef Note: Add more Cayenne Pepper for a spicy flavor.
