One Dish Greek Chicken and Potatoes

- 3 whole chicken breasts, skin and bone included
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 3⁄4 cup butter
- 3 teaspoons oregano
- 5 red potatoes, quartered
- 1 tablespoon minced garlic
directions
- Preheat oven to 400°F.
- Wash and quarter potatoes, peel if desired.
- Rinse chicken breasts.
- Spray large casserole dish with cooking spray.
- Place chicken breast in casserole dish.
- Melt butter using 1/4 cup of it to baste onto the chicken.
- Sprinkle 1 Tbsp oregano, 1/2 Tsp of minced garlic, salt and pepper on chicken.
- Mix the remaining 1/2 cup of butter with the olive oil and lemon juice and mix well.
- Place quartered potatoes around the chicken breast.
- Pour butter, olive and lemon juice mixture over potatoes, careful not to rinse away the seasoning on the chicken.
- Total Bake time is 50 minutes.
- Bake for 15 minutes, then baste chicken with butter mixture and add the remaining 2 Tbsp oregano to the potatoes with salt and pepper to taste.
- Continue baking, basting every fifteen minutes.

This would have been a 5-star recipe for sure if the measurements had been consistent from the ingredients to the directions. It calls for 3 teaspoons of oregano, but in the directions it totals 3 Tablespoons -- I believe the 3 teaspoons was correct. It also calls for 1 Tablespoon of minced garlic, but only tells you what to do with 1/2 teaspoon in the directions. I was lost there -- so just minced up a Tablespoon and put it on the chicken and potatoes both. My husband and I both loved this recipe -- there was plenty of butter with that poured on the potatoes so we basted the chicken every 15 minutes with that butter instead of adding the other 1/4 cup.
