  • Combine shortening, brown sugar, egg, milk, and vanilla in large bowl. Beat until well blended.
  • In medium bowl, combine oats, flax seeds, flour, baking soda,salt, and cinnamon.
  • Add dry ingredients to shortening mixture and mix until well blended. Stir in white chocolate chips, cranberries, and nuts.
  • Drop rounded tablespoons of dough on to greased cookie sheet. Bake at 350F for 10-12 minutes, or until lightly brown. Cool 2 minutes on cookie sheet, then cool on rack.

I'm a stay at home mom and I LOVE to cook (it's actually theraputic for me!). I started out taking baking classes at a neighbors house when I was very young and over the years (many, I might add) I've developed into a pretty good cook (or at least that's what I've been told). I love to entertain and I cook everything for our annual party, 100+ people. Nothing too fancy, just good down to earth food. The challenge is always trying to find/develop recipes that I can make ahead of time and freeze.
