Nuts & Stuff Pound Cake

1 bunt cake

ingredients
- 1 (18 ounce) yellow cake mix (or white)
- 1 (3 1/2 ounce) package vanilla instant pudding mix
- 1 (8 ounce) carton sour cream
- 4 eggs
- 1⁄2 cup vegetable oil
- 1⁄2 cup sugar
- 1⁄2 cup chopped nuts
- 2 tablespoons cinnamon
directions
- Mix first 5 ingredients for about 7 minute.
- In separate bowl mix the last ingredients.
- Grease a bunt cake pan.
- Pour 1/2 of the batter in the pan.
- Sprinkle with 1/2 of the sugar mixture.
- Repeat layers.
- Lightly press topping into the batter with the back of a spoon.
- Bake at 350 for 50-55 minute.

This was delicious! But, I wouldn't classify it as a pound cake, because it wasn't as dense as a pound cake and also VERY moist. But, it could have been because I messed up when making it. As I was cleaning up, after putting the cake in the oven, I realized that I had forgotten to put the pudding into the cake batter. What to do.......?? I took the cake out of the oven, and poured the batter back into the bowl (layers and all) and added the pudding and mixed it again. The end results was a cinnamon and walnut filled cake that was so moist! I'm sure the flavors would have been different if I had followed the directions correctly, but I was still none the less pleased with the end results Next time I will make according to your directions! BTW since a cake flavor wasn't listed the used a yellow cake mix. Thank you for sharing your wonderful and easy recipe. Made for PAC Spring 2010!

My Family and I moved to South Africa at the beginning of 2007 to be missionaries. My Husband is the Pastor of a church in Eden Park, a township in the Jo'burg area. We are having a great time. My kids love it (3 of them, 1 born here). We have got to do many exciting things( pet lion cubs, feed giraffes, eat Zebra(gross!)and other meats(Warthog was surprisingly the best, go figure) and swim on a beach with penguins, to name a few). I have always loved to bake but just got into cooking since moving over here. There were a lot of things I couldn't find over here(and still can't) that we were wanting so I started searching for good recipes for everything from sausage, salad dressing and root beer,to enchilada sauce, Macayo's baja sauce(posted), and Applebees hot wings!
A fellow missionary turned me on to this site and My husband got me a membership for this last birthday. I am loving it!
