No Carb or Low Carb Gluten Free Spinach Bread

"A tasty No Carb or with a little cheese a low carb bread. A slice of this bread with a thin slice of pepper cheese broiled in top and a slice of bacon is one of my favorite breakfasts. The cheese works with my diabetic regimen but feel free to omit or use less. My gluten free daughter uses just swiss cheese. I have kept it refrigerated in a baggie for 2 weeks with no problems."

  • preheat oven to 350.
  • grease the loaf pan liberaly with the butter.
  • squeeze the water out of the spinach.
  • Chop the spinach to about half the size it comes.
  • mix all the ingredients and pour into a loaf pan.
  • bake about an hour and 15 minutes until a knife insearted in the center comes out dry.
  • let cool and slice as desired.
  • Keep refrigerated.

I always barbecued and camp cooked but now that I am retired and my wife is disabled I do almost all the cooking. My preference is for recipes that are fairly simple with over the top results. And most important I still ride my 1940 Indian!!
