ingredients
- 9 cups chicken broth, can use Vegetable or 9 cups beef broth
- 1 lb white button mushrooms, sliced
- 1 medium yellow onion, diced
- 2 carrots, diced
- 2 celery ribs, diced
- 1⁄2 cup barley
- 1 (7/8 ounce) package dried mushroom, Trader Joes has a . 88 ounce package
- 3 garlic cloves, minced
- 1 teaspoon salt (optional)
- 1⁄2 teaspoon dried thyme
- 1⁄2 teaspoon ground black pepper
directions
- Combine all ingredients in crock pot.
- Cover and cook on low for 6-7 hours.

The only thing I did wrong when making this soup was when I tried setting the timer the crockpot was plugged into.....I'll have to find the directions yet again. It was done by the time I got home and I had a bowl right away. The only alteration was the serving size since it was just for me. Other than that it was very luxurious to come home and have dinner ready. I know someone else who will like this so I will definitely be making it again and in a larger amount.
