  • In a small bowl combine all of the spices (sumac, pumpkin spice, black pepper, smoked paprika, and cayenne). Set aside 2 tablespoons of this mixture.
  • in an XL 14" saute pan blanch the sliced onions with the 1/4 cup of olive oil and 2 tablespoons of the above spice mixture. Cover when not stirring. Approximately 5 minutes.
  • Toast pine nuts in a 10" fry pan.
  • With remaining spice mixture, coat the chicken pieces.
  • In a half-sheet baking pan, lay down 6 pita loafs, smother with the sauteed onions, place one chicken piece on each loaf, and sprinkle with toasted pine nuts.
  • Bake at 350 degrees for 45-60 minutes.
  • Sprinkle with parsley and serve with yogurt on the side!
