  • Heat oven to 425 degrees.
  • Press 1 pie crust into the 9 inch pie plate.
  • Stir together sugar and flour.
  • Put half of the chopped rhubarb into the pastry lined pie plate.
  • Sprinkle with half the sugar flour mixture.
  • Repeat with remaining rhubarb and sugar.
  • Dot with butter.
  • Cover top with second pie crust.
  • Cut slits into top pie crust. Seal the two crusts together.
  • Sprinkle top with sugar.
  • Cover crust edge with 2 inch strip of aluminum foil to prevent excessive browning. Remove foil last 10 minutes of baking.
  • Bake 40 to 50 minutes until crust is brown and filling boils through slits.
  • Cool completely. Enjoy!
