Mom's Cornbread Dressing

- 6 pieces toast
- pan cornbread, 9X13
- 4 -5 ribs celery, chopped
- 1 large onion, chopped
- 4 boiled eggs, chopped
- poultry seasoning, . to taste
- salt and pepper, to taste
- chicken or turkey stock
directions
- Prepare cornbread mix or recipe, and toast bread, while chopping other ingredients.
- Crumble the toast and cornbread, in the 9X13 pan.
- Add the chopped celery, and onion (which may also be sauteed, if desired).
- Add the chopped egg.
- Stir in canned or fresh turkey or chicken stock, until soupy. (Approx. 3 1/2 cans, usually).
- Bake at 350 degrees for 45 minutes to 1 hour, until crusty on top, and baked through.

I'm a retired teacher, now, whose children have grown up, and abandoned me! ? Rather than cooking huge portions, I'm on the hunt for cooking-for-one ideas, or meals that can be tweaked, to make eating leftovers more varied and exciting. I have a pressure cooker, which I love, and I've been making yogurt, eggs, ribs, etc, in that.
