Miramichi Fiddlehead Muffins

ingredients
- 1 cup white flour
- 1 cup whole wheat flour
- 1 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1⁄2 teaspoon allspice
- 1 teaspoon salt
- 1 egg
- 1⁄4 cup cooking oil
- 1⁄2 cup white sugar
- 1 cup fiddlehead, cooked (drain well)
- 1⁄2 cup cold milk
directions
- Grease and flour a 12 cup muffin tin. Preheat oven to 350°F.
- Put all seven dry ingredients in a bowl and stir well.
- Add egg, oil, and milk in a bowl and whisk together well.
- Add sugar and fiddleheads.
- Mix egg mixture to dry ingredients and mix well.
- Bake for 20 - 25 minutes.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
